I was wondering, does anyone use gray defense anymore? besides Pharisees

Not really, unless they use Syrians. Most are Gold, Brown, Pale Green, and Crimson.

I see Sabbath Breaker in a lot of decks. ;)

Romans are a decent defense and fun to play.

I played a deck today that has a mono-Syrian defense with Raider's Camp.  Of course I'd never play it in a tournament that I wanted to win.  But it is useful for teaching my playgroup about some aspects of the game, and it's pretty fun when playing against mid-level competition.

Syrians & Romans are really the only established gray defenses (other than Phars). While neither are top tier, they are both playable.

I use gray Romans it works good for me And sabbath breaker :P

I think that I have Sabbath Breaker in all my T-1 decks :-[
