 I noticed Covet got updated with a unity modifier in the LoR article. Would you still use it?

"Unity: X (Y)" is a replacement for the condition "If all of your X are Y", so the ability doesn't work if the Unity isn't met. In this case, if any of your Lost Souls are not O.T., you can't use the ability.

If you play this in T2, and take an NT soul from your opponent's deck with the first one, does that interrupt the unity for the second?

No, because Unity only looks at your cards, and a card from your opponent's deck isn't yours.

If you get Escape from the opponent's deck and exchange it for a N.T. Soul in your deck, that would mean the Unity stops and you can't give Covet.
