What would be a good 10 card offense? I have looked at White Garden Tomb and Genesis can either of those produce a viable offense in 10 cards?

White TGT is a good idea for 10 cards, but it isn't very deep. I would at least splash ET/AoCp in to kill ECs.
Another idea is heroless, if you want to be awesome (and have a infinite defense).

If I went heroless I would have to change my current defense. I have a large Defense, just need something to go with it, I may have to shrink my Defense to accommodate something larger.

Heroless uses a bit more than just 10 but with heroless you'd most likely bump your deck size up for more defense/offense anyways.
As the small offense guy here, I'll post a few for your viewing pleasure and enjoyment.
Now assume you don't include doms as offense.

I also have cof in case something goes horribly wrong. Anyways the idea of THIS one is to use either evil for killers to snipe off their protection fort then shoot all their ecs dead with Judge's seat OR use Ehud to choose an immune character. Play SS to wipe their territory, heal ehud (since the ec is immune they get no chance to negate). Then snipe the immune ec with JS. This offense has won me many a tournament.

and saul/paul on defense.
Now this is a bit bigger than the other offense. Pretty much convert Saul Paul over to Paul. Ra use an itb/trumpet blast to win the first battle (killing their protect fort). use backwards shadow when they CM you. Then next use ITB + AOCP to terr wipe them.
Another fun one is End game use Hidden Tresures, a green prophet and sowing the seed. Place it on an ec, then die. Next turn flip up crown of thorns to speed it up and watch their whole territory get converted. (Note: Kill the protect fort before you do this)

How does Saul/Paul get around return to hand/deck cards like Grapes? Does one of those you mentioned protect against that?

It can't, but you just convert again. This version doesn't use the crazy set asides the Heroless used to because of Grapes.
