Is there a card out there that protects your opponent's hand from discard? I'm trying to find a way to get around the new Guardian for a defense I'm thinking up

You can use a “choose the rescuer” card to force them to rescue with your Simon the Zealot and make sure he survives.

The only way I can think of is to use something like Stalks of Flax or Centurion at Jerusalem to switch/give your opponent control of a Hero that protects their hand, like Jacob (Israel).

You can also make a side battle with Rehoboam or the side battle EEs and make your opponent control Simon the Zealot. 

You can also play the Crowds LS and cards that exchange LS (like Nebushasban).

Honestly, I'm not sure the slots required to add these combos would be worth it just to counter Guardian.  Because even if you pull them off, you then have to keep Simon in play, Crowds in your opponent's LoB (and hope they don't draw 2+ when they attack), etc.

From my experience since RoJ released, people are usually not dedicating a Dominant slot to GoyS as often as they should (IMO) in T1.

However, if this is for a T2 deck then I nearly always see GoyS.

I personally always have it in one of my dom slots in t1 and t2. It's too useful not to have, especially in a deck with multiple martyrs.

Also, I'd like to point out that simon wouldn't work for a combo like this, because he protects from opponent's cards.
Actually, looking over cards that protect hands, it seems there are none that could protect your hand from your own good cards...
