In Teams, if a card says "your" or "opponent," what exactly can that card target?

"Your" does not include your teammate.

"Opponent" means either opponent, except in battle it means the person you are fighting (once that has been decided) I think.

But I've barely played Teams so I could be wrong.

This is correct.  "Your" only means cards that you personally own and control, just like in all the other styles of official play.

"Opponent" means either opponent
This is also correct, with one exception.  When you play a card that says "opponent" you may choose either of the opposing TEAM members to be the target.  However, if the card targets that "opponent" more than once, then you have to be consistent and target the same player.  In other words, you can't target both opponents with the same card unless it says to.

When youre playing teams, doesnt your oponent consist of two people becoming one unit?

What about in a multi-player game. Who is "your opponent" when there are 3 of them?

Or who you are blocking, if you are on defense and play a card like Confusion.
