If you block with Trembling Demon from hand with crown of thorns activated would his ability take effect before he was discarded?

Unless a card says otherwise (this may be wrong, depends on what the elders say about clarifying text), it's at the battle resolution, if their toughness is <= 0.

If you activate Crown of Thorns and your opponent has a 1/1 in territory then is it discarded?

Correct. If characters reach 0 or less toughness, they are discarded, with the exception of characters in battle.

However, it is possible to use a protect fortress to stop that from happening.  High Priest's Palace + CoT + Sadds/Phars = 1/0 I can haz initiative?

Are you 100 % sure? It would make sense, although I have seen it played the other way many times for example someone plays hunger and that territory was immediately cleared.

People usually just discard them unless they can negate it or something so they don't forget or something.
