Title: Set Aside fortresses - Chamber of Angels and Name of the Lord?

Can these fotresses be targeted/negated by cards like Image of Jealousy and Destructive Sin, if these evil enhancements are played on the heroes of the fortress' owner?

I didn't know to what extent "Set Aside" status protects a fortress.

No.  These fortresses cannot be targeted by any card that does not specify "in set aside."  That includes Image of Jealousy, Destructive Sin, and Prince of the Air among others.
