Does Nazareth stop people from under decking cards in my hand?

No, because underdeck does not count as a shuffle ability.

I believe the only card that actually does currently protect from underdecking is Simon the Zealot (though I may be wrong).  As already stated by Red Wing, Naz most definitely doesn't protect from it.

Well, besides the obvious one of Thaddeus (http://redemption.wikia.com/wiki/Thaddeus_(Di)) (though he only protects against those EC and enhancements played on them), there is the lesser known Standing in the Gap (http://redemption.wikia.com/wiki/Standing_in_the_Gap_(FF)), which would protect you from all evil underdecking abilities.
