How far do the properties of exchange stretch? We know from T2 that Lost Souls exchanged also exchange "the one selected for rescue." What other sort of things get exchanged?
For example, if Jacob bands to Angel under the Oak who exchanges with Moses, what happens? Jacob's band is Negated, but will Moses stay because Jacob didn't band to Moses, he banded to Professor Oak? Will Moses have to leave because the exchange took place before the band was resolved, therefore making Moses the banded-to character? Would Moses become the banded-to character simply by virtue of exchange?

Jacob banded to the angel and the target doesn't change. Moses is brought in by the angel's ability. In this case Moses will definitely stick because Angel under the Oak is CBN. If he wasn't then I think that it would cascade back and end up with just Jacob by the numbers.

I know there was resistance to making that rule but Nebushas.... was deemed broken for type 2 if they didn't rule that way. I think that might be the only thing that actually changes status in addition to changing location. I don't remember - what happens when you exchange with a character in set-aside? Does the new character take the place and start gaining numbers?

No, you can return them from set aside whenever you want.
