Specifically these cards:

  • The Centurion at Capernaum / Roman Centurion
  • The Centurion at Calvary / Roman Centurion

How do they work?

While out of play (in deck or hand, for instance), you can target as either (like with a search ability). When you go to play it, you choose one side or the other, and that is what it will remain as until it is removed from play via bounce, shuffle, etc. If you play The Centurion at Calvary as a hero, he remains aligned to that side of the card. Even if he is converted to an Evil Character, he is just the converted version of the Red side of the card and does not "flip" to the gray side. That being said, if you play him as a hero, if he is bounced, you can replay him as an EC. Flip cards are fun like that.

Quick note, there are some cards, like Nebuchadnezzar (PoC), which say they begin as a particular identity in the identifier, meaning that when out of play you can only target them by that identity. So Nebby begins as an Evil Character and thus can't be the target of a "Take a Hero from deck" ability, for example. All of those cards have a built-in way to convert to the other identity which is the only way you can get to it and once they leave play they revert back to their "face value", so whatever they begin as. Just something to look out for, but otherwise they work as Marc described.
