This term means what exactly? 
That I can choose the card to be male or female?

Genderless cards are not male or female. If a card says it targets a male card or female card, it cannot target a genderless card.

What's the current official status on Angels and Demons? At first, I heard they were genderless, meaning cards that affected males or females wouldn't apply to them.

But, then, after a few years, I heard it explained that if the picture looks like a male, it is. And if it looks like a female, it is.

So, what's the official word?

Demons are male by default, but some are genderless. The only female demon is Cubus from the Angel Wars set.

Justin is correct, except I think Spirit of Doubt from AW is also female.
