Which Expansion Game is best in your opinion?
~Adds New Game Strategy
~Best Played with Multiple People
Options
*Seafarers
*Cites and Knights
*Traders and Barbarians
Also, What is the best way to score a tournament?

Cities and Knights has been more popular than Seafarers among the people that I play with (which is mostly family). The other one that's a collection of smaller expansions I've never played so I can't comment on that one.

To be fair, I've not played Traders and Barbarians, but my opinion is that Cities and Knights is by far and away the best expansion.
Most of my family likes the original, but they avoid Seafarers at all costs. I find it okay. You just replace roads with boats. So seafarers only adds a bit more importance to the sheep. Other then that....meh.

At this point i would love to hear about traders and Barbarians.

Maybe you already have all the info you need on this, but I love Settlers, so I thought I'd throw my opinion on here.
Cities and Knights is EPIC. My family loves it. Commodities add a layer of strategy you just don't have in regular Settlers.
Seafarers, in our opinion, has a few flaws that are huge drawbacks. One, it's really hard to make random boards quickly, because you can't follow a pattern for the numbers. Two, the game goes really really slow resource-wise, since you spend time building settlements on coasts (touching fewer numbers/resources) and you spend time building lots of ships to get to islands.
I've never played Traders and Barbarians.
