I loved pale green when I played and honestly now that I'm back I am going with what is familar. I know other colors are strong but is pale green still viable enough to be solid.
I need to figure out an offense as well since I am still lacking some of the usual cards for stronger decks in each color.

Pale Green is definitely still viable.
Assyrians are quite a formidable defense.
Magicians are good on their own or when paired with another theme.
Those are the two main defenses in Pale Green, and certainly the strongest.

Which one is better, in my experience its maicians, but I haven used them a lot lately.

I think it's best to have a combination of the two.

Assyrians usually need a fast offense like Judges, Isaiah or Disciples to be most effective. If you combine Assyrians with Magicians, you have a bit more inherent speed in the defense. However, straight Assyrians can still be very powerful.

I like how most maicians are multicolored, so its harder to sop them fully with stuff like imunity.

Actually being multi color makes them easier to stop with things like immunity. You only have to be immune to one of their brigades.

I always loved my Assyrian defense when I played Type 2. Having a little combination in the defense is good too but I usually limited it to Archers of Kedar.
